Hello and welcome to the most non-committal adjective! If you don’t know what to say, just swirl your wine, take it out, and just say, “Interesting…” to yourself. This will buy you a little time as you remember the difference between a peach and a nectarine, or as you try to determine the flavors of cherry or tobacco.
Although it may seem obvious to some, only amateurs will be caught holding their glass to the bowl. It’s not snobby, I promise. This is completely practical because the temperature of a wine is a big deal with the pros. Plus, it’s like a secret wave of people all driving the same car, the secret handshake of wine pros.
Most people can smell any wine, no matter how subtle it is. However, some wines are extremely difficult to smell aromas. There are many reasons for this. First, wines sit in a bottle for a year or more without oxygen. In this state, the chemical reactions that age the wine pull in other elements for the task. You can decant wine, especially red wine, to get the full effect, or know that you need to let your glass sit for 5-10 minutes before drinking so it can “breathe.”
Is the wine super fragrant like a fresh spritz of perfume? Or, is the smell bold and loud like your drunk cousin at the wedding? Like your drunk cousin who won’t shut it up at a wedding, it’s best to describe them as “expressive” rather than “they just won’t stop talking. If “expressive” doesn’t fit your fancy, try: flashy , exuberant, vibrant, showy, bountiful, or lively.

The average is the strangest thing people can understand. Spitting is not always necessary. But, if you go through a lot of bottles or a lot of wineries in a day, spitting is a good idea. Not only will it keep you sober(ish) but, it will also keep you focused on tasting rather than just drinking. I would advise practicing your spitting skills to keep them classy. Trust me, it makes a difference.
“Spicy” is not a word to describe the wine. Don’t try to make it into something. It can be confusing when you think about how many spices come through the tasting notes: anise, cloves, pepper, cinnamon, etc. Be more specific and use words like “peppery” or “leathery” if there is a spice flavor. If a wine tastes sharp, it probably has high acidity so it’s nice to know the difference.
Imagine when you feel the alcohol burning in your throat and how the vapor reaches your nose and spreads throughout your body. Like steam coming out of a tea kettle, that’s what I mean by “hot”. The level of alcohol increases the overall perception of the body. Wines can range from an alcohol level of 5% to 24%. Now, that’s pretty high!

Happy Taco Tuesday, friends! You know what’s coming after yesterday’s post on my favorite recipe for Mexican carne asada…
I have long had a weakness for these grilled steak tacos whenever I spy them on a menu at restaurants and street tacos. But now, living in Barcelona where good Mexican food is harder to find, I’ve taken to making my own carne asada tacos at home. And as someone who has very high standards for what constitutes excellent tacos, I have to say… these are pretty good.
As I mentioned in my post yesterday, I’m a big fan of using a bold marinade for carne asada steak, and love that mine infuses a delicious balance of citrusy, garlicky, herby flavors. before cooking it over high heat on a grill. (Or, if you’re like me and don’t have one right now, an indoor grill pan or cast-iron skillet works just as well.) Then from there, I prefer to serve my tacos street-style on warm corn tortillas with a simple topping of chopped white onion and cilantro, a squeeze of lime juice, plus a scoop of guac or sliced avocados if you want to add creaminess. That said, however, feel free to add any other toppings you like too – salsa, crema (or sour cream), chiles, radish, crumbled cheese would be delicious too.
Best Summer Salads
The recipe itself is very simple, but it takes a few hours to marinate the steak. So plan ahead, maybe go the extra mile and make some homemade corn tortillas while you wait for the steak (highly recommended), serve them with some ice-cold margaritas, and enjoy! at dinner and is amazing with anything from chicken to fried fish to shrimp.
